An Essential Tool for a Serious Cook One of the most abused kitchen tools is the knife. Most people don't understand their importance, nor what constitutes a high-quality knife. High-carbon stainless steel is the gold standard for kitchen knives. Like most high-performance items of any genre, they require a fairly care and maintenance regime. However, in our post-structural, disposable society, many lack the understanding of how little a price this is for a far better culinary experience.Enter our sharpener. Most people don't purchase carbon knives because they have to be honed or sharpened, preferring to get "never needs sharpening" knives which, once dulled, are then disposed of and another copy purchased. This sharpener makes quick work of most of the pedestrian maintenance issues for high carbon knives, which makes purchase of said knives much more practical. Why? Because this three-step process will keep your knives ready to help at a moment's notice.The use of this sharpener is easy; you drag your blade through each of the each of the slots (two metal, one ceramic), going from the first one on the left to the third one all the way to the right. This also offers more flexibility that a honing steel. Depending upon the shape of your blade, you can do a fuller sharpening by using all three slots, or you can just do a quick "tune-up" using the ceramic element. This not only adds to precision and performance for your knife, but safety as well; a sharp knife is safer than a dull one.I did knock off one star on the rating due to build quality; if you look at the provided images, the handle is clearly plastic with a rather large seam. However, the sharpening elements work well.Will this replace a professional sharpening or a high-quality electric sharpener? No. However, at this ridiculously affordable price point, it will work as an effective place-holder until you can. Oh, and as far as I know, this only works with European blade geometry.Despite one or two drawbacks, highly recommended for the money.. ;

Good addition to any kitchen Works great for Chicago cutlery, have an old set....probably 20 years old, this thing can turn knives into razor blades.

Saved an old knife!! I have an old and trusty pocket knife that I just couldn't get sharpened and was not looking forward to tossing. I bought this on a whim and it brought the blade back to near razor sharpness. So glad I stumbled on this gem.
